Kofta Meatballs With Eggs What you will need ● 500g minced beef ● 6 eggs boiled ● 1 teaspoon garlic ginger paste ● 1/2 teaspoon turmeric ● 1/2 teaspoon curry powder ● Salt to taste ● Juice of 1 lime ● 2 tablespoons tomato paste ● 1/2 cup chopped dania to boost the taste ● 2 tablespoons oil ● 2 tablespoons chili sauce What to do ▪ In a flat plate with minced meat, add salt, turmeric powder, curry powder, garlic ginger paste and 1/2 of the lime juice. ▪ Mix well with your hands until well combined. Tangy Super Delicious Tamarind Chicken  Recipe  Let’s make one of my signatures, the tangy tamarind (ukwaju) chicken. I love the tartness and combination of flavour in this recipe. We will use some chicken thighs, but if you wish, you can use a whole spring chicken for same recipe. Tangy Tamarind Chicken  What you will need ● 5 pieces of chicken thighs about 500g ● 1 1/2 teaspoon garlic ginger paste ● 1/2 teaspoon turmeric ● 1 teaspoon curry powder ● 1 teaspoon black pepper ● 1/2 teaspoon coriander powder ● 1/2 teaspoon paprika ● 1 onion sliced ● 1 tablespoon honey ● Salt to taste ● 2 tablespoons oil and ● 1 1/2 cup thick tamarind sauce/ extract ● 1 bunch fresh coriander What to do ▪ Pour all powdered spices; turmeric, curry powder, black pepper, coriander and paprika over the chicken and rub the mixture all over. Delicious Strawberry Smoothie Drink Let’s make my favourable  berry smoothie, we will use readily available frozen mixed berries (from major supermarkets) and fresh strawberries. We will combine mixed berries with milk and vanilla yoghurt to give you a smoothie that tastes like no other. The tartness from the berries, a touch of sweetness and sourness from the vanilla yoghurt and creamy texture from the whipped cream makes all the difference. Delicious Strawberry Smoothie  What you need ● 100g frozen mixed berries ● 50g fresh strawberries ● 500ml vanilla yoghurt ● 500ml frozen milk ● 250ml whipped cream ● 50g berry sauce (cook some berries in sugar and reduce them or dilute berry jam with a tablespoon of water) What to do ▪ Remove the leaves from 5-6 strawberries and put them in a blender. ▪ Add in the frozen mixed berries -- frozen berries tend to have more flavour and can keep for months in the freezer, perfect for making smoothies and sauces. ▪ Add in the vanilla

King Fish Steak Rice Recipe  Let’s make some king fish steak rice, this recipe is super simple to follow. All you will need is some good steaks of king fish and a few spices. It’s a super alternative to the usual pilau with a twist. Let’s cook! King Fish Steak Rice What you will need ● 3 slices king fish steaks ● 1 teaspoon turmeric ● 1/2 teaspoon garam masala ● 1 teaspoon garlic ginger paste ● Juice of 1 lime ● Salt to taste ● 1 large onion sliced ● 3 tablespoons oil ● 2 cups rice ● 4 cups water ● 1/4 cup cherry tomatoes (garnish) What to do ▪ Marinate the fish with lime juice, garlic ginger paste, salt, turmeric, garam masala and black pepper. Here is my favorite and very easy to whip up mango and passion cooler. Mango, Passion And Vanilla Ice Cream Milkshake  What you will need ● 1 large ripe mango ● 500ml ice cold milk ● 500ml vanilla ice cream ● 5 - 6 large sour passion fruit ● 2 large glasses What to do ▪ Peel the mango and slice it, ensuring you get most of the flesh. Set aside. ▪ In a blender, add in the mangoes. Add in 500ml milk and ensure the milk is ice cold (frozen) with some chunks of ice so that your drink will be frothy once you blend it. ▪ Add in 250ml or half of the ice cream in the blender. Give it a good blend, resting the blender every minute or so. ▪ Cut your passion fruits into two and squeeze. Once the passion pulp is in the glasses, gently pour in the blended mixture in the glass. You will see a layer of passion in the bottom.

This drink is super delicious, super chocolatey and calls for very few ingredients a great way to use your left over soft bananas, never throw soft bananas if need be freeze them and Use them to make shakes, smoothies and ice cream. Soft bananas tend to become super sweet and delicious in making desserts. A great natural sugar option.   Choco Banana Cooler Drink What you will need ● 4 to 5 soft bananas ● 500ml ice cold milk ● 90g drinking chocolate (powder) ● 250ml ice cream ● 1 cup walnuts (optional) ● 100ml chocolate sauce What to do      ▪ Peel the bananas and add them into the blender. Add the drinking chocolate powder. For a less sweet option, you can use cocoa powder’ which does not contain sugar and will give you a darker and richer cooler. ▪ Add in the ice cold milk and give it a good blend (about 3 minutes, resting the blender every minute or so). ▪

Get about 1 kg potatoes wash them, prick them with a fork sprinkle some oil and salt all over then bake them at 200 degrees Celsius for about 1 and 1/2 hours until the skin is crisp and the flesh is soft. Jack Potatoes  ● Cut a cross on top of each potato, squeeze the sides, add your cucumber yoghurt topping. 1. We will make a non-alcoholic version that is super easy to make and is guaranteed to quench your thirst in this hot weather, then top it up with some ice cream to make it more tastier and fancier. Butterfly Chicken Served With Irish Potatoes  What you’ll need  ● 1 capon approx 1.2kgs ● 1 tablespoon garlic ginger paste ● Juice of 1 lime ● 1 teaspoon Cayenne pepper ● 1 stick rosemary ● 1 teaspoon oil ● 1 onion sliced ● 1kg potatoes peeled and boiled ● Salt to taste What to do    ▪ Remove backbone from the chicken and lay it flat on a plate marinate with the garlic ginger paste, lime juice, cayenne pepper, rosemary and salt to taste. Let it stay with the marinade for 1 hour then lay in a flat baking roast it in the oven at 200 degrees Celsius for about 1 hour or until golden brown and cooked towards inside. Once browned turn the chicken reduce heat to 150 add the potatoes and onions and cook for another 15 minutes. ▪ Add some extra lime juice and enjoy as a meal on its own.

We will marinate some fish steaks, pan-sear them and serve them with this side salad -- a mix of soft lettuce and iceberg lettuce with a touch of cherry tomatoes and lime wedges. Samaki Wa Kupaka Recipe  Hello Samaki wa kupaka! we made this fish with my brother Migrationology one of my favorite grilled fish of all time here is the recipe. Samaki Wa Kupaka  What you’llneed  1. For The Fish ● 1 tbspn Garlic ginger paste ● 1 tspn cayenne pepper ● 2 lime juice ● 1 kg whole fish (Changu) or (Tilapia) ● Salt to taste What to do Put some shallow cuts into the fish on both sides, marinate the fish with the marinade ingredients let the fish set in the fridge for 15 minutes so that flavor can infuse well. Swahili Mutton Pilau Recipe Here is my Swahili Mutton Pilau I always say it na sitochoka this should be the color of your pilau not the red one unless you are making jolof rice yes you can add tomtoes but NO tomatoes or tomato paste in the authentic Swahili pilau.    Super Beef Stew Recipe  Beef Stew What you’ll need ● 500g need fillet steak cut into cubes ● 2 garlic cloves minced ● Juice of 1 lime ● 1 teaspoon black pepper ● 1 onion sliced ● 2 whole tomatoes diced ● 2 knorr beef cubes  ● 1 teaspoon curry powder ● 2 tablespoons oil ● 2 tablespoons fresh coriander chopped ● Salt to taste (optional) What to do ▪ Finely chop the garlic cloves. Spread the garlic, black pepper, on the meat then and set aside to marinate for about an hour or two. ▪ In a pan over medium heat, add the oil, then onions and sauté until almost golden-brown.   ▪ Add the marinated beef, then cook for about 5 minutes or until you seal the pores (when meat changes colour) add the knorr cubes mix well then add the curry powder and tomatoes.
