Jack Potatoes Recipe 


Let's prepare some very easy jack potatoes. Get about 1 kg potatoes wash them, prick them with a fork sprinkle some oil and salt all over then bake them at 200 degrees Celsius for about 1 and 1/2 hours until the skin is crisp and the flesh is soft.

How To Cook Jack Potatoes Recipe
Jack Potatoes 

● Cut a cross on top of each potato, squeeze the sides, add your cucumber yoghurt topping.

1. For The Cucumber Yoghurt (Raita)

● 250g thick plain yoghurt

● 1 cucumber diced
 
● Juice of 1 lime
 
● 1 green chilies chopped (optional)

Mix everything in a bowl, and scoop over the jack potatoes.

2. For The Beef:- Yoghurt Beef   

● Beef

● 750g Beef cut into chunks
 
● 50g paw paw purée (blend raw Pawpaw)

● 1 onion sliced

● 1 tablespoon garlic ginger paste

● Juice of 1 lime

● 300ml thick plain yoghurt

● 2 cups water

● 1 tablespoon oil

What to do


▪ Marinate the beef with garlic ginger paste, salt, cayenne pepper, paw paw purée, and 1/4 of the yoghurt. Let it stand for one hour.
In a pan, put the oil and add the marinated beef. Seal the pores then turn the beef once browned on both sides.

▪ Add in the onions and the rest of the yoghurt. Bring to a boil on medium heat. It will produce its own juices. let it cook until totally reduced (about 10 minutes). Add the two cups of water and let it slow cook for another 30 minutes or until the meat is tender. Finish off with some lime juice.

▪ Once all the sauce is coated on the beef serve with your jack potatoes and the remaining cucumber mix on the side.
