How To Cook Butterfly Chicken
Butterfly Chicken Served With Irish Potatoes 


What you’ll need 


● 1 capon approx 1.2kgs

● 1 tablespoon garlic ginger paste

● Juice of 1 lime

● 1 teaspoon Cayenne pepper

● 1 stick rosemary

● 1 teaspoon oil

● 1 onion sliced

● 1kg potatoes peeled and boiled

● Salt to taste

What to do   


▪ Remove backbone from the chicken and lay it flat on a plate marinate with the garlic ginger paste, lime juice, cayenne pepper, rosemary and salt to taste. Let it stay with the marinade for 1 hour then lay in a flat baking roast it in the oven at 200 degrees Celsius for about 1 hour or until golden brown and cooked towards inside. Once browned turn the chicken reduce heat to 150 add the potatoes and onions and cook for another 15 minutes.

▪ Add some extra lime juice and enjoy as a meal on its own.
