Matoke/Banana Recipe


Matoke recipe cooked with knorr beef cubes then served with my delicious beef stew. This is what I had for lunch on my story sasa try making it at home and share with me the experience.


How To Cook Matoke
Matoke/Banana

What you'll need


1. Coconut Matoke with cherry tomatoes 

● 10-15 medium size Matoke (Peeled, halved and boiled) ‘green plantains’

● 1 onion sliced

● 1 teaspoon garlic ginger paste

● 1 tomato diced

● 1 teaspoon tomato paste

● 1 teaspoon curry powder

● 1 cup cherry tomatoes

● 1 green capsicum diced

● Juice of 1 lime

● 3-4 green chilies

● 150g thick coconut sauce

● 1 tablespoon vegetable oil

● 2 knorr beef cubes

What to do


▪ In a deep non stick pan over medium heat, add the oil and sauté the onions until soft, add the diced capsicum and continue to sauté for about a minute, go in with the garlic ginger paste, curry powder and 2 knorr cubes continue to stir until fragrant about 2 minutes, prick the whole green chilies and put them in the pan as well then mix well, add the tomato paste and thick coconut cream then stir and let cook until the sauce is thick, once thickened go in with the boiled matoke carefully try to flip them with a spatula so that the sauce can coat all over the matoke ensuring you don’t mash them, add in the halves cherry tomatoes and lime juice then continue to cook for another 5 minutes or so, once reduced you are ready to serve the matoke with Beef stew!
