Swahili Mutton Pilau Recipe


Here is my Swahili Mutton Pilau I always say it na sitochoka this should be the color of your pilau not the red one unless you are making jolof rice yes you can add tomtoes but NO tomatoes or tomato paste in the authentic Swahili pilau. Here is the recipe .

Swahili Mutton Pilau 

Ingredients


● 2 cups Basmati rice

● 6 medium potatoes (peeled and halved)

● 2 onions sliced

● 3 Cardamom Pods

● 1/2 a teaspoon whole black pepper

● 2 sticks cinnamon

● 2 whole cloves

● 1 teaspoon whole cumin

● 1 kg Mutton (boiled)

● 1 knorr rice pilau cube

● 1 green pepper diced

● 1 tablespoon garlic ginger paste

● 2 tablespoon oil

● 1 teaspoon ghee

● 4 cups water

● Salt to taste

METHOD


▪ In pot or ‘sufuria’ over medium heat add the oil with the teaspoon of ghee and then go in with the onions, sauté for a minute, then go in with the whole spices (crush them a little bit of you wish using a rolling pin) sauté until fragrant, add in the knorr rice pilau cube and mix well then add the sweet peppers, add the garlic ginger paste and potatoes cook for about 2 minutes,

▪ Add the boiled mutton continue to stir well until flavors combine then add in the rice mix well then go in with the 4 cups of water, and bring it to a boil, adjust seasoning with salt and cook until its almost dry and water has evaporated reduce heat to low and Cover with a tight lid, so that it continues to steam for about 15 more minutes and then fluff up the rice.

▪ Serve with kachumbari and Masala.
