Delicious Saucy Chicken Thighs Recipe
Saucy Chicken Thigh, Maize And Boiled Eggs |
What you will need
1. For the Chicken● 1kg chicken thighs
● 1 tablespoon white vinegar
● 1 teaspoon garlic ginger paste
● 1 teaspoon salt
● 1 teaspoon paprika
● 1 teaspoon curry powder
● 1/2 teaspoon turmeric powder
2. For the Sauce
● 1 cup chili sauce
● 2 cups tomato sauce
● 2 tablespoons vinegar
● A stick of dried rosemary
● 1 teaspoon black pepper
● 1 teaspoon honey
● 1 tablespoon soy sauce
● 3 sweet corn on the cob sliced and boiled
● 6 hardboiled eggs
What to do
▪ In a bowl, put in the chicken and add vinegar. Mix well.
▪ Add paprika and curry powder. Mix well.
▪ Add garlic ginger paste, add salt to taste and mix well then let the thighs marinate for about an hour or so.
▪ In a pan over medium heat, add oil and deep fry the chicken until golden brown. Once cooked remove from oil and set aside.
▪ To make the sauce, use a separate pan. Add all ingredients -- one tablespoon of oil, black pepper, chilly sauce, tomato sauce, soy sauce, vinegar, honey, soy sauce. Add some rosemary and let it cook until thickens.
▪ Dip the chicken pieces in the sauce and make sure they are well coated then place them on baking tray.
▪ Coat the boiled sweet corn with the same sauce and arrange them on the same platter.
▪ Add the boiled eggs and bake at 180 degrees Celsius for about 15 mins (baking is optional, you can serve it as it is but I like the extra crust).
▪ Remove from oven and serve as a meal on its own.
