Whole Roast Chicken With Veggies And Greens |
The festive season is almost here! Here is a super healthy and delicious meal that is enriched with veggies and greens to get your iron up, some starch which is mashed potatoes and chicken where you shall get your protein. How incredible is this? Let's get cooking!
What you will need
● Whole roast chicken with Mash Potatoes and buttered Sukuma and Spinach
1. Buttered Sukuma and Spinach
Ingredients:
● 1 bunch of spinach shredded
● 1 bunch sukuma shredded (collard greens)
● 2 tablespoon butter
● 1 onion sliced
● 1 tomato diced
● 1 teaspoon garlic ginger paste
● 2 Royco Iron Fortified beef cubes
What to do
▪ In a pan over medium heat, melt some butter, add onions, add in garlic and ginger, sauté until golden brown then add tomatoes mix well and then in the spinach and sukuma.
▪ Let it cook until it produces its natural juices in about five minutes, crumble in the Royco Beef cubes to get that meaty flavor and mix well with a spatula.
2. Mashed Potatoes
Ingredients:
● 1 Kg potatoes peeled and cut into rough cubes
● 1/2 teaspoon crushed black pepper
● 2 tablespoon butter
● 1/2 cup plain yoghurt
● 2 Royco Iron Fortified Chicken Cubes
What to do
▪ In pan over medium heat add in 1 liter of water some salt and bring to a boil.
▪ Put in the potatoes, boil until soft.
▪ Drain water, and while the potatoes are still hot, crumble in the Royco Chicken Cubes, crushed black pepper, butter and plain yogurt.
▪ Mash the potatoes with a potato masher until smooth.
3. Whole Roast Chicken
Ingredients:
● 1kg whole chicken with skin
● juice of 2 lime
● 1 Royco Iron Fortified Chicken Cube
● 1/2 teaspoon black pepper
▪ Pour vinegar on the chicken and let it stay in the vinegar for about 10 minutes then wash the chicken.
▪ Crumble the Royco cube mix with Black pepper and Rub over the chicken, add juice of lime place over a baking tray tie the chicken legs with a cotton twine and bake/roast in the oven at 200 degrees Celsius for about an hour or until skin is Golden Brown and liquid runs out clear. Garnish with your favorite some steamed veggies on the side (optional) Serve with the mashed potatoes and Sukuma & Spinach.
