Let’s make a healthier version of coconut potatoes with beef this recipe is simple all you need to do is mix everything in one casserole and bake or roast in an oven no oil needed for this recipe you’ll get your natural oils from the coconut. Let’s do this.
What you will need
● 1kg sliced potatoes
● 1/2 kg beef steak cubed (boiled)
● 1 large sliced onion
● 1 tomato diced
● 300ml coconut cream
● 1 lime
● 1 capsicum diced
● 1 teaspoon garlic ginger paste
● 1 teaspoon turmeric
● 1 teaspoon black pepper
● Salt to taste
● 500ml water
What to do
▪ In a casserole arrange the sliced potatoes add in the onions sprinkle the garlic ginger paste, add in tomatoes, capsicum, turmeric, black pepper then add in the boiled beef, mix well using your hands or spatula now add in salt to taste add half of the coconut cream and water. Roast in an oven at 200°C for about 30-40 minutes or until the the liquid has reduced completely and potatoes are cooked, use a small knife to test the tenderness of the potatoes you don't want to serve half cooked potatoes because sometimes some kind of potatoes take more time to cook, once soft enough Remove from oven Add in the lime juice and the remaining coconut cream on top take back in the oven for another 5-10 minutes to get that extra crust on top if you wish then serve as a meal on its own.
