What you will need
● 1kg sliced potatoes
● 1/2 kg mutton (boiled)
● 1 large sliced onion
● 1 tomato roughly cut
● 300ml coconut cream
● 1 lime
● 3 green chilies
● 1 teaspoon garlic ginger paste
● 1 teaspoon turmeric
● 1 teaspoon black pepper
● 2 tablespoon of oil
● Salt to taste
● 500ml water
● Coriander for garnish
What to do
▪ In a hot non stick pan Pour in the oil, add in the onions and sauté until soft, add in garlic ginger paste, tomatoes, whole green chilies, turmeric, black pepper then add in the boiled mutton, mix well then go in with the potatoes and salt to taste add half of the coconut cream and water. Let it cook until the water has reduced completely and potatoes are cooked, use a small knife to test the tenderness of the potatoes you don't want to serve half cooked potatoes because sometimes some kind of potatoes take more time to cook, once soft enough (also ensure you don't over cook them)
▪ Add in the lime juice and the remaining coconut cream on top let it cook for another 5 minutes over medium heat and serve as a meal on its own with a side of lime pickle or any pickle of your choice. Enjoy.
